Its seeds, leaves and stems are used in cooking. The seeds are similar to anise in both appearance and aroma and are used as a spice for sweet and savoury dishes. Most often, the stems are not eaten on their own but work well as a flavour and smell enhancer for soups and soup bases. Fennel leaves are often combined with legumes and mustards to enrich dishes such as risottos, savoury pies, pasta sauces and Mediterranean marinades. But the simplest way to use fennel is in fresh salad.
